VIDEO: Top snag bags special award for Roma butcher

ROMA butcher Paul Lavelle didn't know he had an award winning sausage when he squeezed the beef recipe into its casing months ago.

But now he and apprentice Lincoln Dykes are heading to the state finals of the Sausage King competition after sweeping the Outback region.

The pair from Queensland Country Meats' beef sausage won ahead of butchers from across outback Queensland.

Mr Lavelle had been trying to win the crown for years, but it wasn't until Mr Dykes came into the frame that they got the winning combination.

"I've been a butcher for about 25 years and I'd never won the Sausage King crown for beef," he said.

"We knew the sausage was great, but we had no idea it was this good.

"Between first and last, there were just six points between them."

It took eight different sausage recipes to get the combination right.

Mr Lavelle also won bronze in the Lamb/Open Class, silver in the poultry class and silver in the continental class.
