MITCHELL baker Kyle Mansfield knows a thing or three about making the perfect lamington.
For three consecutive years the 32-year-old baker has taken out the top prize for his Australian dessert at the Toowoomba Show.
The Mitchell Bakery owner said a lot more goes into a lamington than the public would think.
"It's judged on its appearance, cell structure, coating thickness and of course the taste," Kyle said.
"The first year we entered it we didn't really know what we were doing and just entered in what we thought would win."
Kyle and his wife Fiona were so shocked to win their first lamington prize three years ago that they didn't even attend the ceremony.
"We were absolutely blown away when we got the call," he said.
At the time it was a culmination of more than a decade of 1am starts.
"I don't think you ever really get used to the hours," he said.
"But you do get that satisfaction when you see people enjoying your products."
As for Kyle's recipe and technique, he said he is going to keep it a secret.
"I don't want to give away too many secrets," he laughed.
The Mitchell Bakery is located on the Warrego Hwy in the main street of Mitchell.
