Mitchell Bakery rises to top of the competition
MITCHELL Bakery continues to roll from one award to the next by taking out the Toowoomba Cup at the Royal Bread Show for the third consecutive year.
Edging out 16 other bakeries from across the state in the overall standings, the shop, which dates back to the 1940s, won the 680g multigrain sandwich category while its flat roll and jam rolls also won first prize.
Kyle Mansfield, who owns the bakery with his wife, Fiona, said he was thrilled to have come first against a strong field of shops.
"It's pretty good to get a win in what I think it's the most competitive bread show in Australia,” he said.
"To win it three years in a row is really exciting and was a little unexpected.
"The judges always say we have a competitive product which is judged on a number of factors including volume, appearance, texture, structure and aroma.”
Mr Mansfield said the bakery followed an age-old winning formula of bread making that continues to capture the hearts and stomachs of the community.
"We follow the same recipe that has been here for years and a lot of it has to do with using high-quality products and having a good technique.”
"We're also a little bit more traditional and hands-on than some of the big bakeries that are more machinery operated.”
"Our loaves of bread normally go through about six sets of hands before they hit the shelves, so it's not easy to make and can be quite timely.”
