How do you pick the perfect Australia Day lamb? We asked the Roma experts

GEORGE Ladbrook of Ladbrooks Butchery knows a thing or two about choosing the perfect lamb for Australia Day.

Mr Ladbrook said Australia Day was always a busy time of year, especially in the lead-up to the big day.

“We would sell between 20 to 30 lambs for Australia Day; lamb cutlets and easy care leg of lamb and sausages for the barbecue are also popular,” he said.

“Just use common sense when cutting the lamb, and don’t overcook it.”

Mr Ladbrook said when choosing the perfect lamb, look for a nice pink meat and not overly fatty.

“I would recommend having roast lamb with mint sauce, or lamb chops with gravy is delicious.

“All of our lamb is locally produced in Roma, helping support the community and keeping people in jobs and money in town.

“Everyone should eat lamb on Australia Day, and support the local community.

“It has a distinct flavour. everyone loves to eat it, get some lamb into you.”

Lamb in Australia has gone through a variety of innovations, and the senior principal research scientist in Meat Science at New South Wales DPI believed people will be treated to an array of new cuts and flavours of meat.
